100-Year Old Retired Surgeon Credits His Longevity and Vibrancy in Large Part to His Vegan Diet

100-year old Dr. Ellsworth Wareham credits his longevity and vibrancy to a healthy lifestyle including eating a vegan diet, being physically active, and effectively managing stress, the three tenets taught in the Lifestyle WoRx program.
Dr. Wareham operated on patients until the age of 74, 2 years older than the maximum retirement age of cardiothoracic surgeons at Loma Linda University. He remained at the medical college assisting residents until the age of 95. Now at 100, Dr. Wareham spends his time mowing his lawn, trimming his bushes, and still lives easily with his 86-year old
wife in their two-story home.
Dr. Wareham adopted a plant-based lifestyle in his 50s after reading research of how consuming animal protein increases our cholesterol. He also sites the work of Caldwell Esselstyn, Jr., MD of the Cleveland Clinic, Dean Ornish, MD of the Preventive Medicine Research Institute, and T. Colin Campbell, PhD, Jacob Gould Schurman Professor Emeritus of Nutritional Biochemistry at Cornell University as further inspiration for his dietary choice.

It's Easy Being Green Smoothie By Chef AJ
Still looking for a way to sneak kale into your family's meals? This smoothie is a great way to start!
16 ounces of freshly squeezed orange juice or 2-3 fresh oranges
1 bunch of kale, approximately 12 ounces
2 frozen, ripe bananas
2 cups frozen mango
fresh mint leaves to taste (optional)
In a blender, blend orange juice or oranges with kale and mint until smooth. Add frozen fruit and blend until completely smooth and thick.
For a Creamsicle effect, use half unsweetened almond milk and half orange juice. You can also substitute spinach for the kale.

If you find yourself shopping at Tanger Outlets, make sure to stop by Fortuitea Cafe, located nearby in the Shoppes at Quail Acres.
Owner Tiffany Ford does not advertise the Cafe as a vegan hot spot. She wants to serve her patrons delicious food without calling unnecessary attention to the ingredients that are missing from her plates.
Everything that I have tried has been delicious and it's so refreshing to be able to order anything off of the menu and not have to worry if the item is 100% plant-based.

A Vegan Novel Hits the Bookshelves!

The plant-based lifestyle is permeating more and more aspects of our culture and has recently found its way into a novel. Off the Reservation was written by Glen Merzer, long-time vegan and contributor to Chef AJ's book Unprocessed as well as a host of other books advocating a low-fat, plant-based lifestyle.
It portrays a vegan Congressman who decides to make a bid for the White House. It highlights many of the difficulties faced by modern day politics and proposes unique approaches to address them.
It is an enjoyable and thought provoking novel that I highly recommend and as an extra bonus, includes 20 plant-based recipes that are mentioned in the story.
