Quick, Easy, and Nutritious Options for Lunch

I have some new recommendations for quick, easy, and nutritious options for lunch.  Now, would it be better to create lunches from scratch where we can control absolutely everything that goes in them?  Absolutely, and still try to do this as often as possible.  However, this is not always realistic and these products are great alternatives to the standard American lunch.  They work well if you very short on time.  Keep a stock of them in your freezer and grab them when you don't have time to pack a homemade lunch.

Here is one of my favorite holiday recipes created by my favorite plant-based chef.  I honestly think this recipe tastes better than any conventional green bean casserole recipe I have ever tried.  It calls for sherry, which gives it such a distinct flavor.  I actually double the sherry in the recipe because I love the flavor it imparts so much.

Tis the Baking Season


The holiday season is upon us and just because you have adopted a whole food, low-fat, plant-based lifestyle doesn't mean that you can't create healthy baked treats that are incredibly tasty.
Knowing how to substitute traditional ingredients with healthy alternatives is more than half the battle.
