Taming the Type One Diabetes Dragon Together

Feature Recipe
Yummy Chicken Casserole

Serve sauce over mashed potatoes or rice. Can be made gluten-free.

3lbs Chicken Pieces, skin removed
½ tsp Garlic Powder
1 tsp Salt
¼ tsp Pepper
10 oz (284 ml) *Condensed Tomato Soup (51 carbs)
10 oz (284 ml) *Condensed Cream of Mushroom Soup (23 carbs)
½ cup Green Onions, finely cut (2 carbs)
1 Small Onion, chopped (7 carbs)
1 Fresh Tomato, chopped (4 carbs)

Arrange chicken pieces in bottom of large casserole or small roaster. Sprinkle with garlic, salt and pepper.
Combine both soups with onions and tomato. Spoon over chicken. Cover. Bake in 350°F oven for 2 hours or until tender.
Approx. **9 Carbs/¼ cup sauce.

*For gluten-free alternatives, try Campbell's Tomato with Basil & Oregeno Soup (found at Safeway) and Alymer's Cream of Mushroom Soup (found at Dollarama).

Real Life with the D-Dragon

Diabetes and Children

Diabetes affects every family member, not just the child who was diagnosed. From the parents who always want to protect the child, to the diagnosed child who has to learn to accept their disease, and to the siblings whose time with their parents is now being encroached upon because their parents need to spend more time with their brother or sister. Diabetes nurse educator and family therapist Joe Solowiejczyk offers some thoughts and tips to help the whole family cope.

What is Waltzing the Dragon?

WaltzingTheDragon.ca is a Canadian website for families dealing with type 1 diabetes, created by two parents of children with diabetes: Danielle, a former Registered Nurse, is a mother of three teens (one of her sons has had type 1 diabetes since 2001); Michelle holds a Masters degree in Psychology and is mom to two young children, including a school-aged son (who has had type 1 diabetes since 2008).

The articles on Waltzing the Dragon have been reviewed for content accuracy by the clinical staff at the Diabetes Clinic at the Alberta Children’s Hospital, ensuring the material is grounded in science and best practices. Then, as parents, we provide the practical, experiential layer, sharing “tips from the trenches” and what has worked well in our families. At WaltzingTheDragon.ca, we strive to make the dance a little easier by sharing with you the science of effective diabetes care, as well as the art that makes one truly successful. We hope that, as a result, all of us can focus less on the dragon and more on life.
