Quinoa
Quinoa (pronounced keen-wah) is not a grain; it is actually a seed and related to the spinach family. When cooked, quinoa is light, fluffy, slightly crunchy and subtly flavored. FEATURED INFO/STUDY Discovery: Telomeres Are Key to Immune Function, Wellness, AND Anti-aging! Telomeres are sequences of DNA, located at the ends of all chromosomes, which serve as cellular clocks of aging. Every time a cell divides, telomeres shorten until they become critically short, and the cell either stops functioning properly or dies. By activating a gene that is normally turned off, the enzyme telomerase has the unique ability to restore telomere length. This discovery is so significant that the
Scientists won the Nobel Prize for Medicine in 2009. A major cause of aging is "oxidative stress" which increases the rate of which telomeres get shorter, and increases our rate of aging. Free radicals from processed, junk and fast foods increase oxidative stress and therefore increases the rate of aging. In human blood cells, the average length of telomeres in a new baby is 8,000 base pairs. The average length in an elderly person is 1,500 or lower. Each time a cell divides, an average person loses 30 to 200 base pairs from the ends of that cell's telomeres. Cells normally can divide about 50-70 times and the telomeres get shorter each time until they die or sustain genetic damage that can cause cancer. The best way for us to protect our telomeres is through the nutrients in fruits and vegetables (antioxidants and enzymes). That protection will slow down the

Daiya Brand cheese instead of dairy cheese
Coconut Milk or Yogurt
Vegan ricotta cheese instead of ricotta cheese Tofu can be a good source of calcium, protein, and iron. Please know that organic is best to ensure it is non GMO.
Ingredients: •8 ounces firm tofu •1/2 teaspoon minced garlic •1/2 teaspoon minced shallot •1/2
teaspoon plum vinegar, preferably Umi brand •1 tablespoon fresh lemon juice •1 teaspoon extra-virgin olive oil •1 teaspoon nutritional yeast flakes •1/2 teaspoon chopped fresh basil •1/2 teaspoon chopped fresh parsley •Kosher salt and freshly cracked black pepper
Preparation: Press the tofu through a potato ricer into a large bowl. If you don’t have a potato ricer, mash the tofu with your hands until crumbly. Add the remaining ingredients and mix well. It should be the consistency of ricotta cheese.
Makes about 1 1/2 cups tofu ricotta "cheese".
