Upper respiratory infections are the main cause of doctors visits and missed school and work days. Pot likker soup A friend of mine introduced me to this after he tried it in a small restaurant in Georgia. He was coming down with a cold but, according to him, felt so much better the next day after eating the soup. After trying it myself, I was sold! Not only for the health benefits but for the taste as well. Pot likker is the liquid that is left behind after boiling greens (collard greens, mustard greens, turnip greens etc.). It contains a boatload of essential nutrients including vitamin C and other water-soluble vitamins, as well as some minerals, such as iron.  Drinking this, or using it as a base to make soups, is a great immune booster and a perfect choice when you are feeling run down. Or just simply a delicious comforting meal during these cold winter months.

Many of us do not get enough rest and sleep. According to the Gallup, 40% of Americans get less than the recommended amount. Pot Likker Soup

Serves: 6

5 slices of baked ham, chopped (optional)
1 tablespoon olive oil
1 medium onion, diced
3 medium carrots, chopped
2 garlic cloves, minced
2 cups chicken broth
2 cups fresh collard, mustard, or turnip greens, washed with hard stems removed
8 cups water
pinch red pepper flakes (optional)
Instructions
  1. Add chopped ham to a Dutch oven over medium heat. Heat for about 2-3 minutes and then add olive oil, onion and carrots. Saute until becomes tender, about 2 more minutes. Then add in garlic and cook for 1 more minute. Pour in chicken broth and cook until has reduced by about ½.
  2. Add greens and water. Boil over medium heat for about 45 minutes until greens are extremely tender.
